BABIC, este un un nume sarbesc care se citeste BABICI. Se spune ca cel ce a adus reteta de acest salam de casa a venit din Serbia si chiar exista o legenda care spune ca atunci cand Imparatul Napoleon fiind in retragere din dezastruoasa campanie din Rusia, a poposit o noapte la Buzau, fiind gazduit de boierii buzoieni ( azi exista acesta casa muzeu si se afla pe str. Razboeni) Printre delicatesele locale servite, de gazde, la masa festiva a fost tuica de Lopatari, branza de burduf de Penteleu, dar si babic adus de starostele sarbilor (gradinarilor legumicultori) buzoieni, Grigorie Badau, pe care imparatul le-a apreciat foarte mult. La plecare i-au dat in dar,cateva butelcute din lemn de dud cu tiuca, cateva burdufe e branza si vreo 20 rude de babici, de care se spune ca a fost cel mai incantat imparatul si drept multumire a lasat gazdelor cateva randuri de multumire scrise de insusi inparatul Napoleon.
BABICUL se mai intalneste si in alte zone, dar ca cel de Buzau nu se face nicaieri. El este facut toamna tarziu dupa ce da bruma in gradinile se zarzavat si timpul este rece fara sa inghete apa. De mare impotanta este insasi incaperea in care se prepara babicul, care trebuie sa fie racoroasa fara ca sa aibe ferestre in care sa nu bata direct soarele, bine aerisita. Sarbii cand isi fac casa ei fac special o camera care sa intruneasca aceste cinditii, deobicei ea este orientata catre nord, nord-vest, cu ochiuri de geam, dispuse fata in fata, care sa permita sa se faca un curent, prevazutre cu sita deasa sa nu intre musca. Babicul dupa ce este umplut si presat se pune la uscat in podul carei, care este invelit cu tigla si are cel putin doua cubele de aerisireprin care sa nu intre vrabia. Daca nu ai acest pot se poate pune la streasina in care sa nu bata soarele, dar trebuie sa la pazesti de pasari .
Am avut oscazia sa cunosc mai multe retete de babic. Adevaratul babic de Buzau se face dupa o reteta unica si cu un proces de fabricare bine stabilit, transmis cu sfintenie din tata-n fiu. Daca este respectata intocmai, reteta si procesul de fabricatie, un babic poate fi pastrat la loc umbrit si aerisit chiar si un an de zile, numai ca pentru a fi feliat iti trebuie fierastrau, asa de tare se face prin uscare.
Ingrediente: pulpa de de vita si in aceiasi cantitate pulpa de porc degresata. Unii inceasca sa puna si carne de oaie sau ce cal dar acesta nu mai este BABIC. Un alt ingredient de mare importanta si care da aspectul, gustul si reziztenta in timp este boiaua dulce si boiaua iute de ardei rosi. Sarbii isi fac ei acasa aceasta boia. Boiaua dulce se face din ardei capia, iar pentru boiaua iute se folosesc ardeii iuti, de-ti ia foc gura, care se pun la uscat cu vrej (tulpina) cu tot in podul casii imediat dupa Sf Maria Mare. Cand ardeii sunt bune usucati, de se sparg usor cand sunt strinsi intre degete, se dau prin masina de macinat cu seminte cu tot de se obtuen o pudra fina. Al doilea condiment este sarea si atat. Orice alt ingredient folosit altereaza reteta de babic si nu este indicat.
Carnea proaspata, calda, de la vitelul si porcul abia taiat, se da prin masina de tocat cu sita potrivita se sareaza unpic si se lasa cateva ore sa se raceasca. Atentie, carnea tocata se va pune numai in covata din lemn de plop. La primul framantat, la fiecare kg de carne tocata se pune cate 3-4 lunguri de boia dulce si se framanta circa o jumatate de ora ca sa lege. Se fac bulgari cat pumnul si se pun pe o plansa din lemn de stejar si se lasa sa se odihneasca 12 ore. Se reia operatiunea de framantat, cand se pune si boia iute dupa gust si sare daca este nevoie, pana cand carnea devine pastoasa si se leaga. Ca sa incerci daca este destul de picanta si sarata, se fac pitaci din compozitie si se frig in cratita fara ulei. Se fac iar bulgari si se lasa circa 6-12 ore la macerat tot pe plansa de lemn. Apoi se framanta si se fac chiftele de tocatura si se frig neaparat pe jar sau in tigae fara grasime, ca sa se deguste compzitia daca este sarata si condimentata cat trebuie. In situatia in care mai este necesar sa se mai sareze sau sa se condimenteze cu boia este strict necesar ca tocatura sa fie stransa cat mai neted in covata si sa se lase cel putin o ora dupa care se umple intestinul.
De mare importanta este membrana babicului. Ea trebuie sa fie intestin subtire de manzat de cel putin 200 kg dar nu mai mare de 350kile bine curatat cu cutit de lemn si pus la sare 3-5 zile, iar inainte de folosire se clateste cu apa rece si se scurge bine trecandu-l prin mana stransa bine.
Umpelrea se face cu masina de tocat cu palnie mare speciala, avandu-se grija sa nu prinda bule de aer. Un baton de babic trebuie sa fie de 40 de cm lungime si inca de la inceput trebuie sa fie ceva mai tare. Dupa umplere se leaga la capete strans cu ata de canepa. Urmeaza operatiunea de calcare cu sticla sau sucitorul, in scopul eliminarii bulelor de aer, ce ajung la membrana. Pentru a se elimina aceste bule se inteapa cu acul membraba pe intreaga suprafata cat mai des. Dupa ce s-a terminat aceasta operatiune si ne-am convins ca babicul nu are in interior aer, punem babicii pe o planseta de lemn, uscata, iar deasupra punem o alta planseta uscata, tot de lemn, peste care se aseaza greutati(cam 1-2 kg de fiecare babic) La 12 ore se umbla ca sa se intoarca plansele pe partea uscata, si se dubleaza greutatile. Dupa 2-3 zile de presare se scoate babicul la uscat in podul casei. Se usuca circa 3-5 zile dupa care se da la un fum rece si nu prea puternic.
Pe parcursul iernii, babicul se pastreaza agatat la grinda in pod, iar spre primavara se impachetate in hartie de ziar legata la capete si pune inapoi pe culme in podul casei, sau in magazie bine aerisita.
Babicul poate fi servit ca aperitiv dar si la prepararea altor mancaruri: ciorbe de verdeturi, omlete, pilafuri, tocane, ba si la sarmale si alte tocaturi in loc de condiment etc.
Cand este servit ca aperitiv se bea tuica de pruna de Buzau sau bere rece, iar la mancaruri un vin rosu de Blajani sau o bere rece.


A doua gustare rapidă- Burger românesc

Această gustare este un pic mai delicată, fiindcă este nevoie de ceva gătit extra. Dar apoi treaba merge repede.

Ai nevoie de:

  • 4 chifle- eu am folosit chifle cu susan
  • 1 roşie mare şi rotundă
  • lettuce
  • ceapă verde
  • chiftele mari din carne de porc

Pentru a face chiftelele ai nevoie de:

  • 300 gr de carne tocată de porc
  • verdeţuri
  • SPICES
  • pâine înmuiată în apă
  • usturoi răzuit

Chifteaua românească seamănă cu ceea ce am scris eu în articolul Chiftelele copilăriei mele.

Pâinea se stoarce de apă şi se adaugă într-un bol, alături de celelalte ingrediente. (verdeţurile mărunţite).

Din aluatul rezultat se fac 4 chiftele mari şi se prăjesc bine în tigaie. Eu am folosit şi capacul, pentru a fi sigură că s-au gătit bine.

Asamblarea burgerului românesc.

În chifla tăiată pe la jumătate, se pune 1 frunză de salată, apoi se pune chifteaua, apoi 1 felie de roşie şi deasupra bucăţi de ceapă verde!

Şi acum îmi plouă în gură când îmi aduc aminte de acest burger.


Tobă de porc

1. Pentru această toba de porc, tot capul de porc se pârleşte bine, se curăţă şi se taie. La fel, celelalte ingrediente. Se pun toate ingredientele într-un vas mare cu apă rece şi oţet şi se lasă aşa timp de 30 de minute. Apoi, se mai trec încă o dată pe sub un jet de apă rece.

2. Se aşază la foc toate ingredien­tele pentru toba de casa într-o oală suficient de mare, de aproximativ 7 litri. Se lasă să dea în clocot, se ia spuma şi apoi se pun sarea, foile de dafin şi piperul boabe.

3. Se lasă la fiert în jur de 2 ore, timp în care şi stomacul porcului se pune în apă rece cu oţet. După ce toată carnea a fiert, se taie bucăţele mici care se amestecă cu sare, piper măcinat şi puţină zeamă în care au fiert. Se pune amestecul în stomacul curăţat, se coase, se fac câteva găuri cu o andrea şi se pune din nou la fiert în apa în care au fiert iniţial ingredientele. Se lasă aproximativ 30 de minute.

Toba de porc facuta in casa nu trebuie sa lipseasca de Craciun de pe masa ta!

4. După acest timp, se scoate toba de porc pe un suport de lemn şi se aşază deasupra alt suport de lemn peste care se aşază greutăţi. Toba de casa se lasă să se răcească aşa până a doua zi.

Tips

Prin congelare, cand este realizata corect, se poate conserva o mare cantitate din nutrimente si, in plus, se stopeaza proliferarea bacteriana (insa nu se distrug bacteriile existente, prin urmare daca aveti dubii cu privire la un aliment, este mai bine sa il aruncati). In teorie, alimentele congelate pot fi utilizate pe termen nefefinit, insa din experienta generala, calitatea alimentelor se altereaza odata cu trecerea timpului. Carnea si produsele din carne trebuie pastrate in ambalajul original pana la utilizare, iar daca se depasesc 2 luni de congelare, trebuie impachetate suplimentar cu folie speciala de plasic/introduse in pungi. De asemenea, temperatura congelatorului trebuie setata la -18 grade Celsius si pachetele cu alimente bine etansate (nu trebuie sa patrunda aer in ele).

Inainte de a le introduce la congelator, alimentele trebuie racite , in caz contrar va creste temperatura generala si se pot topi alte alimente. Nu recongelati niciodata un aliment decongelat si incercand sa divizati in mai multe portii alimentele pentru optimizarea consumului. Nu uitati sa le etichetati corespunzator, fiind esentiala datarea corecta pentru a nu depasi intervalul recomandat (pentru un consum lipsit de probleme). Nu in ultimul rand, curatati constant cogelatorul de depuneri de gheata si nu va ingrijorati deoarece in cazul unei intreruperi de curent, daca pastrati usa inchisa, alimentele ar trebui sa ramana inghetate.

- Cea mai corecta este dezghetarea lenta, in frigider - evita reactivarea microorganismelor daunatoare
- Legumele si fructele se gatesc fara decongelare pentru a le congela este bine sa le oparim - desi pierdem din enzime, castigam nutrienti"

Ingrediente pentru iahnia de fasole cu carnati

Durata gatit: 1 hour 30 mins

  • -1 kg fasole boabe
  • -1 kg carnati afumati sau alta afumatura
  • -250 ml suc de rosii
  • -1 lingura pasta de tomate sau ardei
  • -1 bell peppers
  • -1 morcov mic
  • -100 g telina radacina
  • -400 g ceapa
  • -3-4 linguri ulei
  • -1 lingurita de sare
  • -1 varf de cutit piper
  • -thyme
  • -marar si patrunjel verde
  • -1 frunza de dafin

Mancare de linte cu carnat

Am tot citit despre linte, am vazut multe retete dar nu am preparat si nici nu am mancat pana acum. Se spune ca alaturi de soia, lintea este alimentul preferat de vegetarieni. Datorita timpului de fierbere redus, lintea este o alternativa la fasole, in preparate pasate, in supa, in combinatie cu orez, carne si legume. Are un continut ridicat de fibre, fier, magneziu, fosfor si proteina, are continut scazut de grasimi si nu contine colesterol.

Cum mi-a fost in drum un magazin cu produse naturiste am cumparat o punga de linte verde (am vazut ca este si roie) si acum trec la gatit.

Ingredient: 1 cana de linte verde, 3 cani de apa, 1/2 ceapa alba mica, 2 catei de usturoi, 1 cub Knorr de pui, cca 250 g carnacior (cabanos), o lingura de bulion, sare, piper, patrunjel verde

Method of preparation: se caleste ceapa si usturoiul tocate fin intr-o lingura de ulei, se adauga cateva bucati de carnacior si se mai tin impreuna cateva minute pe foc.

Se spala lintea in cateva ape, dupa care se scurge

si se rastoarna peste ceapa calita si carnacior.

La cateva minute se scoate carnaciorul, se pun doua cani de apa, cubul de concentrat de pui si se fierb la foc mic sub capac. Se urmareste sa nu scada prea mult apa si la nevoie se adauga dupa nevoie. La final se pune o lingura de bulion, se condimenteaza dupa gust.

Lintea fierbe foarte bine si in cca 30 min este gata. Se repune carnaciorul
