Ingredients for making pasta with zucchini and mushrooms
- Pasta 300 grams
- Champignons 3 pieces (large)
- Zucchini 1/2 pieces
- Bulgarian red pepper 1/2 pieces
- Vegetable oil 5 tablespoons
- Homemade tomato sauce 200 milliliters
- Salt to taste
- Pepper to taste
- Coriander to taste
- Tomato 1 piece
- Pitted or pitted olives
- Goat Cheese for Serving
- Basil leaves for serving

Frying pan, pan, kitchen knife, spatula, tablespoon, colander.
Step 1: stew the mushrooms.
Wash the mushrooms, dry, cut into thin slices, and then send them to fry in a pan with hot oil. Salt to taste. Cook until liquid has evaporated from the mushrooms.
Step 2: add the zucchini.
Peel the zucchini half, cut it into cubes and send to the pan to the mushrooms. Pepper to taste. Cover and cook over medium heat until tender, stirring occasionally.
Step 3: add the sauce.
When the zucchini becomes soft, add peeled and finely chopped peppers and tomato sauce (it can be replaced with chopped tomatoes, canned in their own juice). Add coriander and salt to taste. Continue to simmer under the lid.
Step 4: add the pasta.
At the same time (or a little in advance), boil the pasta in salted water to an al dente state.
When the vegetables are ready (you can check it by tasting them), add boiled pasta to the pan with them and mix everything very carefully to make a paste with zucchini and mushrooms.
Step 5: serve the pasta with zucchini and mushrooms.
Arrange the hot pasta in plates, add tomato cubes, basil leaves and goat cheese slices to each serving, and decorate with chopped olives or olives.
