Step 2: the dough.

The first is dough. First of all, we separate from the total number of products - 1.5 tbsp. flour, 2 tbsp sugar, milk and yeast. That’s all you need for a couple.
We heat the milk to 32-34 degrees (i.e. to a warm, but not hot state), dissolve 2 tbsp of sugar in it, add the yeast and mix everything until smooth.
Sift the flour that was prepared for the dough, sift and pour the liquid part into it. Consistency dough should resemble sour cream of medium density. We cover our batter and send it to a warm place for 40-50 minutes. After this time, the mass increases by 2-2.5 times.
Pour the ready-made dough, the beaten egg with the remaining sugar and salt into the remaining flour, mix and add the melted butter at the very end. The main thing is not to hammer the dough with flour. Otherwise, it will not rise.
Ready dough again sent to a warm place to rise. It has increased very well in volume, approximately 3 times. It took 1 hour and 20 minutes (i.e. 2 times 40 minutes each)

Step 3: Cut the dough.

We cut the dough into 16 balls. Each weight is 50-60 grams. Roll each, put the filling and close the edges. Lubricate the top with yolk and sour cream.

Step 4: Baking.

Bake in the oven at 180 for 20 minutes

Recipe Tips:
